Easy Fruit Cake.

All in one fruit cake ( courtesy of a margarine tub many years ago!)

This has to be one of the easiest fruit cakes ever. I used to make it years ago when I had three very small sons and not a lot of time. Thumbing through a very old notebook I have just rediscovered the recipe. Perfect for this time of year when your Christmas cake is sitting waiting until the 25th December and you fancy the taste of all that delicious fruit.

Ingredients:
5 oz Soft margerine ( any will do!)
5 oz caster sugar
2 large eggs beaten
8 oz of sieved self raising flour
1 teaspoon mixed spice
5 oz of sultanas
2 1/2( two and a half!) oz of currants
2 1/2 oz of raisins
2 oz glacé cherries (rinsed and halved)
1/4 pint milk with 2 tablespoons removed

Method:
Preheat oven to 150 or Gas 2
Line and grease 8 inch loose bottomed cake tin

Measure all the ingredients into a bowl. Mix together with a wooden spoon and pour into cake tin. Smooth top and place in middle of oven. Cook for 1 and a half to 2 hours. Test with skewer. Leave in tin for 5 minutes and then turn out and cool on wire rack.

  1. A slice of this would go down a treat with a cuppa at school for break time Barbara ! I can imagine your family walking through the door & being greeted by the amazing aroma of those fruits.
